- 1 cup Canned unsweetened full fat coconut milk
- ⅔ cup Pineapple juice
- 2 Eggs
- 2 tbsp Avocado oil
- ¼ cup Maple syrup

- 1 tbsp Baking powder
- ½ tsp Kosher salt
- ¼ cup Unsweetened shredded coconut (optional)
- ⅓ cup Chopped pineapple (optional)
Instructions

1In a large bowl, whisk together coconut milk, pineapple juice, eggs, avocado oil, and 2 tbsp maple syrup.

2Add cassava flour, baking powder, and kosher salt and whisk to combine.
