Coconut Almond Protein Bites Recipe

Ingredients

  • ¾ cup Raw almonds
  • ½ cup Shredded unsweetened coconut (divided)
  • ½ tsp Cinnamon
  • 7 Dates (soaked in hot water, drained)
  • 1 scoop Vegan protein powder
  • 2 tsp Adaptogenic mushroom powder
  • ¼ tsp Vanilla extract
  • ¼ tsp Salt

Instructions

  • 1
    Combine almonds, ¼ cup shredded coconut, cinnamon, soaked dates, vanilla, protein powder, salt, and mushroom powder in food processor until mixture becomes smooth enough to roll into a ball.

    Roll dough into balls.

    Roll balls in ¼ cup shredded coconut. Serve.

Coconut Almond Protein Delight

I’m always a proponent of making things fresh when you can, and protein bars are no exception. Not sure if anyone feels the same, but nearly every vegan packaged protein bar on the market I’ve tried has a questionable taste or chalky texture. Even though it’s obviously more convenient to go to your grocery store and pick out a packaged protein bar, it actually doesn’t take that much time or energy to recreate them at home.

I decided to use just a few quality ingredients like almonds, shredded coconut, dates, and my favorite protein powder to make a base that I rolled into balls instead of forming into bars. I did this because I always feel like I prefer half of a protein bar as a snack anyways. Then the other half gets all dried out left in the package.

By forming the protein base into balls, it’s easier to control the amount you eat. If you’re not that hungry, you can easily eat one ball and feel satiated. If you’re preparing for a big workout, two might be better and have the amount of protein you’re looking for.

Why adaptogenic mushroom blend?

I also made these protein bites adaptogenic by adding a mushroom blend of lion’s mane, chaga, cordyceps, and ashwagandha. Adaptogenic mushrooms are a huge part of my lifestyle and can only enhance your life and health. It makes sense to incorporate them into a food that is meant to be an energy boost, especially considering the properties of cordyceps, specifically.

All you have to do to recreate this recipe is to combine all the ingredients in a food processor and then roll the dough into balls! I rolled mine in unsweetened shredded coconut, but you could try hemp seeds or even a drizzle of nut butter! I love the taste and texture of these and once you get the hang of the consistency of the dough, you can play around with flavors and variations!
