Ingredients

  • 1 Egg (or flax egg)
  • 2 tbsp Plant-based milk
  • ½ tsp Vanilla extract
  • 2 tbsp Nut butter
  • ¼ tsp Cinnamon
  • 3 ½ tbsp Almond flour
  • ⅛ tsp Baking powder
  • 3 tsp Coconut sugar
  • ⅛ tsp Salt
  • 2 tbsp Paleo-friendly chocolate chips

Instructions

    Add egg, milk, vanilla extract, and nut butter to the mug.

    Whisk to combine.

    Add remaining ingredients, except chocolate chips, and whisk again until ingredients are fully incorporated. Add chocolate chips and stir once more.

    Microwave for 1 minute and 30 seconds.

There’s nothing better than eating an entire dessert to yourself. Even more amazing when it’s gluten-free, dairy-free, paleo, vegan-friendly, and can be made in under five minutes. If you’re an impatient cook like I am, this mug cake is the perfect instant gratification dessert – no starting up the oven and waiting 30 minutes for a cake to bake and another 20 minutes to wait for it to cool.

When making this recipe, I suggest using a tall mug because this cake rises a bunch during its time in the microwave. This also makes a good amount of cake, so feel free to share some with a friend…or don’t! I like topping mine with coconut butter and some extra chocolate chips!
