  • ½ cup Coconut aminos
  • 1 tsp Sesame oil
  • 1 tsp Rice wine vinegar
  • ½ tbsp Minced garlic
  • 5 drops Liquid stevia
  • 2 tbsp Ginger juice
  • ½ cup Vegetable broth
  • 1 tbsp Arrowroot starch
  • 1 tbsp Avocado oil
  • 4 oz Extra firm tofu cubes
  • 1 cup Raw broccoli florets
  • 1 cup Bell pepper slices
  • ⅓ cup Bamboo shoots
  • 2 cups Frozen riced cauliflower
  • 2 tbsp Sesame seeds

Instructions

    In a bowl, whisk together sesame oil, rice wine vinegar, coconut aminos, minced garlic, ginger juice, vegetable broth, liquid stevia, and tapioca starch.

    Heat avocado oil in a pan on medium heat. Add tofu and brown slightly on all sides.

    Add broccoli, bell pepper, and bamboo shoots and cook on medium low heat for about 10 minutes or until veggies are fork tender.

    Add stir fry sauce and stir to coat veggies. Cook for 3-5 more minutes or until sauce thickens, stirring frequently.

    Prepare cauliflower rice to package instructions.

Keto-Friendly Takeout at Home Just Got Better

Part of the difficulty in following the keto diet is looking out for foods with hidden sugars. A lot of our favorite takeout dishes have a high carbohydrate count due to ingredients like soy sauce and stir fry sauces with lots of sugar in them. Because we will never stop craving Asian food takeout, here is an easy keto tofu stir fry recipe that’ll become a weeknight staple! This flavorful yet light meal only has 212 calories per serving, with 13 grams net carbs, 11 grams fat, and 8 grams protein from plant-based tofu.

No stir fry is complete without a tasty stir fry sauce, and we made ours with coconut aminos, sesame oil, rice wine vinegar, garlic, ginger juice, vegetable broth, liquid stevia for a hint of sweetness, and arrowroot starch to thicken it all up. Coconut aminos is a good soy-free alternative (we love using it in our keto delivery menu!), and it also has less sodium than original soy sauce. Sesame oil is a must when making stir fry, as it imparts a rich toasted sesame flavor. This oil also contains strong anti-inflammatory and antioxidant properties. Instead of using minced or grated ginger in our stir fry sauce, we opted for ginger juice to make it a little bit easier. You can typically find ginger juice in the international aisle in your grocery store. We highly recommend ginger juice made by The Ginger People.

A lot of stir fry sauces have a thickener in them so the sauce reduces nicely when cooked. More often than not, corn starch is used. However, we have found that arrowroot starch has a lower carbohydrate count and still gets the job done!

In this easy keto tofu stir fry recipe, we use red bell pepper, broccoli, and bamboo shoots as our veggies. However, you could technically replace this with any keto-friendly vegetables! Just make sure you keep a close eye on the cook time if you are changing the types of vegetables you use.
