Edible Cookie Dough In Paleo Form!
Cookie dough has become all the rage in the last few years, so much so that there are now restaurants dedicated to serving multiple different flavors of it, as if it were fro-yo. I’m not here to hate on this, but I am here to mention that gluten-free and dairy-free options at these places are extremely limited. That means I haven’t really bothered going to try these spots, but I’m not about feeling FOMO when it comes to desserts, so I had to make a move. It was time to make my own raw cookie dough.
Let’s just say I rose to the challenge and these cookie dough balls are actually insane. I can’t wait for you to try them. They actually taste like real cookie dough and have a pretty great consistency. The best part is that they’re insanely easy to make and all you need is a bowl. No ovens or food processors necessary.
For traditional edible cookie dough, it’s necessary to par-bake flour since it’s difficult to digest raw all-purpose flour. With this paleo option, that isn’t necessary because I used coconut flour to bind them instead!
My pro tip for making these is to make sure you use quality cashew butter. I’ve made these with multiple brands and the quality does make a difference. My favorite rendition was made with a raw cashew butter that I thought made them super creamy. Feel free to make the decision yourself whether you use a cashew butter made with raw or roasted cashews! You can also try it with other nut butter and I’m pretty sure the recipe would work just the same!
Last tip – the consistency might seem soft once you’ve mixed all the ingredients together, but these balls work best if you store them in the fridge, which means they will bind together more as they cool. However, if you can’t roll the dough into a ball, feel free to add more coconut flour.
