Ingredients

  • ¼ cup Ghee
  • ⅓ + ¼ cup Monkfruit sugar
  • ¾ cup Almond butter
  • 2 Eggs
  • 1 tsp Vanilla extract
  • ½ cup Almond flour
  • 1 tsp Baking powder
  • ¼ tsp Sea salt
  • 1 tsp Cinnamon

Instructions

    In a bowl whisk ghee, ⅓ cup monkfruit sugar, and almond butter.

    Preheat oven to 350℉ and line an 8x8 pan with parchment paper.

    Add eggs, vanilla, and whisk again.

    Add almond flour, salt, and baking powder and mix again.

    In a bowl combine ¼ cup monkfruit sugar and cinnamon.

    Transfer batter to 8x8 pan. Evenly smooth the surface with a rubber spatula. Sprinkle cinnamon sugar mixture onto batter.

    Bake for 23-25 minutes, or until a toothpick comes out clean. Remove from oven and let chill in the fridge. Slice and enjoy!

These tasty keto snickerdoodle bars are made with almond butter and almond flour, giving them more nutritional value than you’d find in your traditional baked goods. As a matter of fact, almond flour is high in magnesium and vitamin E, in addition to being blood sugar-friendly.
