- 1 bunch Green onions
- 1 Green bell pepper
- 2 Jalapeños
- 2 tbsp Avocado oil
- 3 tbsp Tomato paste
- 1 tsp Kosher salt
- 1 tsp Ground black pepper
- ½ tsp Garlic powder
- ½ tsp Onion powder
- ½ tsp Smoked paprika
- ½ tsp Ground cumin
- ½ tsp Chili powder
- ¼ tsp Red pepper flakes
- 1 lb Ground beef
- 4 oz Canned diced green chilis
- 1 cup Chicken broth
- 4 tbsp Sour cream (optional)
- 4 tbsp Shredded cheese (optional)
- 1 Jalapeño, sliced (optional)
- 2 tbsp Green onion, chopped (optional)
Instructions

1Chop green onion from the whites until the greens. Dice green bell pepper and jalapeños.

2In a large soup pot, heat avocado oil. Add chopped veggies and sauté 5-7 minutes, or until soft.

3Add salt, pepper, garlic powder, onion powder, smoked paprika, cumin, chili powder, red pepper flakes, and half of your tomato paste to the pan.·Sauté for 1-2 more minutes, or until spices are fragrant.

4Add ground beef and cook for 5-7 minutes more, or until browned.

5Add remaining tomato paste, green chiles, and chicken broth to the pot. Bring to a boil, and then turn heat down to medium low. Cover and let simmer for 20-25 minutes.·Add optional garnishes and serve.
