The Proof Is in the Pudding
The hardest part about eating while on the keto diet is learning how to navigate dessert. While the market is becoming more saturated, there still aren’t a ton of keto desserts you can buy at the grocery store that taste good, so it’s up to you to make something at home. And with limited sweeteners and flours that qualify as keto-friendly, the options dwindle. That’s where we come in with this keto mint chocolate pudding parfait. This dessert uses avocado as the base to make two different keto-friendly puddings that are then layered to achieve maximum deliciousness.
This dessert is fairly low in calories, even though it feels indulgent when you’re eating it. Each serving clocks in at 196 calories, with only 3 grams net carbs and 17 grams of healthy fats. Avocado not only contributes to the texture of this mint chocolate pudding parfait recipe, but also the nutritional value – they are loaded with potassium and Vitamin K, full of fiber, and have been known to aid in lowering cholesterol.
To make the chocolate layer, we add cocoa powder, liquid stevia, vanilla, salt, and a tiny bit of plant-based milk to the avocado in a food processor and blend until smooth. The result is a creamy and chocolatey pudding that tastes like it’s full of sugar and junk, but in reality is real, whole food. The mint layer is similar to the chocolate, minus the cocoa powder, and adding a bit of melted cacao butter for creaminess, and peppermint extract for the mint effect. These two puddings are layered in your favorite glass for an epic dessert.
If the dessert cravings hit and you need something sweet in an instant, make this keto mint chocolate pudding parfait recipe. It’s the perfect accompaniment to our keto meal prep delivery service, and a great dessert to share with friends.
