Ingredients
- 12 oz Frozen riced cauliflower
- 1 ½ tbsp Rice wine vinegar
- 1 tbsp Monkfruit sugar
- ½ tsp Kosher salt
- 2 tbsp Vegan cream cheese
- 1 medium Avocado
- 1 small Cucumber
- ½ Red bell pepper
- 4 Sushi nori sheets
- ¼ cup Coconut aminos (optional)
- 2 tbsp Sesame seeds (optional)
Instructions

1Add riced cauliflower to a pan and cover. Let thaw on medium heat for 3-5 minutes, stirring occasionally.

2Add rice wine vinegar, monkfruit sugar, and salt to cauliflower. Cook for a few more minutes, or until cauliflower is done.·Turn heat off and stir in cream cheese. Set aside.

3Slice avocado, cucumber, and bell pepper into thin slices.

4Place a towel on a cutting board or counter top surface. Place a layer of plastic wrap on top of the towel, then a sheet of sushi nori on top of that. Spread a thin layer of cauliflower sushi rice onto nori sheet, leaving an inch or so at the top and bottom.·Add veggies and then use your hands and the towel to gently roll into a long sushi roll. Repeat with remaining ingredients.

5Chop sushi rolls into individual slices.·Optional: top with sesame seeds and serve with coconut aminos for dipping.

This recipe makes 3-4 sushi rolls, giving each serving 257 calories, just 9 grams net carbs, 14 grams of fat, and 10 grams of protein. Not only is the cauliflower rice the vehicle for our sushi roll, but it also has an impressive amount of nutritional value, with high fiber, crucial B vitamins, and an impressive amount of Vitamin C and folate per bite. To fill the sushi rolls, we opted for creamy avocado, fresh cucumber, and crunchy red bell pepper for extra flavor.
You almost wouldn’t believe how easy it is to make this keto avocado cucumber sushi roll in your own home! Plus, you don’t need a bamboo mat to make quality sushi. In this recipe, we used a towel and some plastic wrap and it went just fine! The beauty of this recipe is that you can essentially use whatever veggies you like in the roll, although some are more friendly for a keto meal plan than others, so keep that in mind! No carrots, even though they taste delicious.
